I would probably even three times this recipe in the future!

Directions

1. Mix flour, ginger, cinnamon, baking soda, nutmeg and salt in large bowl. Beat butter and brown sugar in large bowl with electric mixer on medium speed until light and fluffy. Add molasses, egg and vanilla; beat well. Gradually beat in flour mixture on low speed until well mixed. Press dough into a thick flat disk. Wrap in plastic wrap. (Seperate the dough into even amounts in plastic bags if you are doubling or tripling the recipe). Refrigerate/ Chill 4 hours or overnight.
2. Preheat oven to 350 degrees F. Roll out dough to 1/4-inch thickness on lightly floured work surface. Cut into gingerbread men shapes with 5-inch cookie cutter. Place 1 inch apart on ungreased baking sheets. I used my angel cookie cutter to make dress shapes and make "Gingerbread Girls" also. ( Just pinch the two halves (the top piece with the head and arms, with the bottom piece of the angel dress shape.)
3. Bake 8 to 10 minutes or until edges of cookies are set and just begin to brown. Cool on baking sheets 1 to 2 minutes. Remove to wire racks; cool completely. Decorate cooled cookies as desired. Store cookies in airtight container up to 5 days.
* I often freeze or slightly freeze my cookies BEFORE I ice/decorate them, which will eliminate the chance of their breaking while handling them.

The Most Scrumptious, Sweet Cornbread

Ingredients

*I usually double this recipe to pour in a 9 by 13 pan.
1/2 cup butter
2/3 cup white sugar
2 eggs
1 cup buttermilk, 2 %, whole, or skim milk (what I use for health purposes :))
1/2 teaspoon baking soda
1 cup cornmeal
1 cup all-purpose flour
1/2 teaspoon salt
Directions

1. Preheat oven to 375 degrees F (175 degrees C). Grease an 8 inch square pan. (or 9 by 13 pan for double the recipe.)
2. Melt butter in the microwave in a small bowl. Add sugar and the melted butter together in a large bowl and blend. Add eggs and beat until well blended. Add the milk (best with whole or 2 % but I use skim for health purposes) and baking soda and blend.
3. Stir in cornmeal, flour, and salt until well blended and only a few lumps remain. Pour batter into the prepared pan.
Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean.
4. Grease and flour (or just use Pam like me) an 8 inch square pan or a 9 by 13 if you doubled the recipe.

In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Stir in 1/4 (or 3/4 for double the recipe) cup of semi-sweet chocolate chips for extra chocolatey goodness! Spread batter into sprayed, prepared pan.
Bake in preheated oven for 25 to 30 minutes. Do not overcook. Mine take 30 min.
To Make Frosting: Combine 3 tablespoons butter, 3 tablespoons cocoa, 1 tablespoon honey, 1 teaspoon vanilla, and 1 cup confectioners' sugar. Add a little warm water and blend in if too thick.
Frost brownies while they are still warm. Decorate with sprinkles or anything you want for fun. Enjoy the best brownies in the world!

Creation #2 French Crepes with Cream and Berries

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 400px; height: 300px;" src="http://1.bp.blogspot.com/_La2ul-Y5nkY/S_aI1qd6fNI/AAAAAAAABdQ/FTnZ8WezY5w/s400/DSCF0658.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5473712852629617874" />

These crepes were quick and easy and they look really pretty! Just fill them with fruit (and little on top for decor), whipped cream or cool whip. I also took Wilton's chocolate buttercream, mixed it with whipped topping for a chocolate filling and it was YUMMY. Top with powdered sugar of course!

Basic Crepe Recipe

1 cup all-purpose flour
2 eggs
1/2 cup milk
1/2 cup water
1/4 teaspoon salt
2 tablespoons butter, melted
Directions

In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.

Creation #1 Super Moist Chocolate Cake with Frosting and My Own Buttercream Filling

<img style="display:block; I've recently discovered that I have a passion for cooking...not everyday, every night meals, but beautiful, fun, gourmet creations. Time and money I know, I just love it! Desserts in particular!
So it is now my mission to become a skilled baker and cook. I must admit the movie Julia and Julia inspired me as I'm sure it did many other women and so I will make it my goal to start slowly, not expecting too much of myself too soon.
I created my first recipe tonight, a Chocolate Buttercream Filling and am VERY excited. I love a yummy chocolate filling. It is very fulfilling to create something that is your own, work of art and nothing less! My goal is to try different recipes and to make a picture blog of my culinary successes. So my first will be petit fours with my own filling. Photos will come soon!

Best-Ever Caramels

2 cups heavy cream 1/2 cup butter
1/2 cup sweetened condensed milk 2 cups walnuts (optional)
2 cups sugar 1 t. vanilla
2 cups light corn syrup

This recipe can be doubled if you use a very large, heavy pan with a completely flat bottom (16-18 quart) to allow for expansion.

Combine cream and condensed milk in a double boiler and scald. For time sake, this can be done withourt a double boiler on high heat for two minutes then to miedium, if you use a pan with no ridges and stir continually with a metal straight edge pancake turner. Watch carefully that it will not scorch.

In a larger, heavy flat pan with no ridges in the bottom, combine sugar and syrup and bring to a boil over medium-high heat, stirring constantly with a flat edged turner. Let mixture boil with the lid on for 2 minutes. Remove lid and add butter. Stir. Gradually add cream mixture with a 1/4 measuring cup, one at a time, to the boiling syrup, stirring constantly. Do not let boiling stop! This process should take about 15 minutes. Cook to 246-250 degrees at sea level with a candy thermometer (or cook to a firm ball stage formed in cold water). For Utah and Idaho I cook it to 226-230 degrees. Remove from heat. Add nuts and vanilla and pour into a buttered 9x13 baking dish. Cool. If this candy is too hard you can soften in the microwave for 10-20 seconds. Cut and wrap if desired.

Perfect Fudge

1 1/2 cups small marshmallows, frozen
2 1/2 pkgs. The flavor is rich and satifying and carries with it the warmth of many happy Texas memories for me!

1 1/2 cups flour
1 cup oil
16 cups water
2 T. Salt
1 t. black pepper
1/4 onion flakes
5 lbs large shrimp (peeled, deveined and raw)
2 cups fresh or canned crabmeat
2 T. gumbo file
1 cup sliced green onion (save quite a bit of extra to serve on the table with the Gumbo)

Make the roux, first, with the flour and oil. Cook until dark chocolate brown on medium high heat stirring CONSTANTLY with a wooden spoon, spatula or wire whisk!!! You do not want the roux to burn and stick to the bottom, but do want it to brown long enough (dark brown like dark chocolate color) so it gives the Gumbo the rich flavor it needs. Add seasonings and shrimp and allow to simmer for 30 min. Add additional water if the roux if too thick. Add crabmeat and simmer for another hour or more stirring occasionally. Add the file before serving. Serve in bowls with white steamed rice, finely sliced green onion and dashes of Tobasco sauce (use one drop at a time to taste b/c it will make your Gumbo spicy pretty fast!) Yummy!

Note: Other seafood may be added if desired (oysters, whole crabs etc.), but this is the way that I grew up eating and loving it!

Neiman Marcus Monkey Bread Rolls

Okay! So these are seriously the best rolls I've ever had! Even without the strawberry butter they are so moist and yummy (from all that butter!). Enjoy!!!

*I recommend doubling (or more) the recipe cause one times only makes about 8 or 9 rolls. You can freeze them (right after they've cooled) in freezer bags and they are perfect whenever you decide to take them out and let them thaw! Then microwave them slightly and they taste just the same as if they came out of the oven.

1 T. plus 1 t. active dry yeast
1 cup warm milk
1/4 cup sugar
1 t. salt
1 cup melted butter
3 1/4 cups all-purpose flour, sifte (if possible)

Preheat the oven to 400 degrees.

Place the yeast, millk, and a pinch of the sugar in the bowl of an electric mixer fitted with a paddle attachment (alternatively the dough can be mixed by hand in a large mixing bowl). Let stand for about 5 minutes, until the yeast is dissolved. Add the sugar, salt, and 1/2 cup of the melted butter, and stirin the flour to make a soft dough. Transfer the dough to a lightly greased bowl, cover with plastic wrap, and let rise in a warm place until doubled in volume, about 1 hour.

Punch down the dough, turn out onto a lightly foured work surface, and using a rolling pin, roll out to a thickness ofr 1/2 inch. With a pizza sutter or a sharp knife, cut the dough into 2 inch sqares. Gather up three of four squares (only 3 or even two large ones is you're using a smaller muffin tin) of the dough and press the ends of them together with your fingers (otherwise the finished roll withh not hold together). As your pressing them together the dough your hands will look like 3 or 4 flour petals sprawled out...don't worry if it doesn't look like perfect squares of dough, the pincing will make the "flour" look a little wilted. Place the remaining 1/2 cup of the melted butter in a ghoallow bowl and dip the bottom of the rolls into the butter, reserving the remaining butter. Transfer the dough to a meduim-size muffin pan, buttered side down , and let it rise in a warm place for 30- 43 min, or until doubled in volume. Bake in the oven to 15-20 min, or until golden brown. Brush generously with the remaining melted butter (salted butter best) and serve with Strawberry Butter.

Stawberry Butter

1/2 cup butter, at room temperature (Using salted butter will make them much better)
1/3 cup good quality (I used Smuckers Jam) strawberry preserves

Place the butter in the work bowl of an electric mixer and beat on high until light and fluffy. Add the preserves and beat until well combined. To serve, spoon or pipe the flavored butter into 2-Tb remekins or onto side plates.
Keep refrigerated in an airtight container. This spread will last for two to three days. Yields about 2 cups.

Super Moist German Chocolate Cake and Icing

German Chocolate Cake

1 package sweet German chocolate
1/2 cup water, boiling
1 cup butter
2 cups sugar
4 egg yolks, unbeaten
1 tsp vanilla
2 1/2 cups cake flour
1 tsp baking soda
1/2 tsp salt
1 cup buttermilk
4 egg whites, stiffly beaten

NOTE: ALTHOUGH THIS CAKE RECIPE IS DELICIOUS, YOU CAN, AND I USUALLY DO, MAKE THE CAKE WITH A DUNCAN HEINSS MIX. IT IS JUST AS GOOD! IT IS THE ICING THAT MAKES THIS RECIPE UNIQUE!!!

Melt chocolate in boiling water. Set aside to cool. Cream sugar and butter until fluffy. Add egg yolks, one at a time, beating well after each. Add cooled, melted chocolate and vanilla. Blend well. Sift together flour, soda, and salt and add to chocolate mixture, alternately with the buttermilk. Beat well. Fold in egg whites and blend. Line the bottoms of 3 (9 inch) greased and floured caked pans with wax paper (optional) and pour batter into pans. You may also do just two layers of cake or a large rectangle cake pan as well. I usually do two pans and have a two-layer cake. Bake at 350 degrees for 30-40 minutes. Remove from oven and let sit for 10-15 minutes. Turn onto cake racks and carefully remove waxed paper. Top each layer with Coconut Pecan Icing and then ice the sides to completely cover the whole cake.

Hint: Sometimes the icing is really runny right off the stove top, so wait until it cools and stiffens (maybe put in fridge) so it doesn't fall down the sides as much!

Coconut Pecan Icing (The Best!)

6 egg yolks
2 cup sugar
2 cup evaporated milk
2 sticks of butter or margarine
2 tsp vanilla
2 2/3 cups flaked coconut
3 cups of pecan pieces

Combine egg yolks, sugar, butter, milk and vanilla. Cook and stir over medium (don't let start boiling or getting too hot or the egg will congeal more) until thickened, 12-15 min. Add coconut and pecans. Beat with a spoon until thick enough to spread. Let cool almost completely until spreading or it will fall all down the sides of the cake. Makes 6 cups for the 2 or 3 layered cake.
